The Spanish Conquistadors over 400 years ago brought their recipes along with wheat and ingredients from Spain.

The cuisine of New Mexico is deeply flavorful and has continued to develop and grow with each group of peoples who move here to enjoy New Mexico’s rich culture and traditions.   Today, the foods found in New Mexico are truly unique and comprise the United States’ original fusion cuisine.
