About Enchantment : A New Mexican Cookbook

When I started this project, I had no intention of creating the largest collection of traditional New Mexican recipes ever made. This started as a small project for myself and perhaps a few friends who I grew up with in Los Alamos. As is typical of just about any project that I begin, it quickly grew out of control and it became Enchantment: A New Mexican Cookbook.

 

As this project progressed, I quickly learned how little I knew about New Mexican food. Each region has its own idiosyncrasies and Northern is different than Southern. Pueblo cooking is vastly different than Santa Fe cooking. Each community has its own recipes that are unique to that area. Additionally, New Mexico has many cultures who live closely together and each culture provides heavy influence on the other’s foods. So, I’ve learned a lot along the way and that this recipe book is just really a cursory sample of the richness that is found throughout the state.

 

If you have any traditional family or community recipes, please submit them. (There is a link in the menu at the top of the page.) Unlike many recipe books that are “Finished” prior to publication, it is my belief that no New Mexican cookbook will be complete in decades if I (or anyone else) were to wait for it to be fully complete. New recipes will be collated and will hopefully provide additional material for future editions of Enchantment: A New Mexican Cookbook.

Hi, I’m Art Pollard. It’s great to see you!

New Mexican cuisine is unlike any other in the United States.  Its history goes back thousands of years and was first developed by the pueblo peoples who now inhabit the Rio Grande Valley with an emphasis on Corn, Squash, Pinion, and native game. The Spanish Conquistadors over 400 years ago brought their recipes along with wheat and ingredients from Spain.

The cuisine of New Mexico is deeply flavorful and has continued to develop and grow with each group of peoples who move here to enjoy New Mexico’s rich culture and traditions.   Today, the foods found in New Mexico are truly unique and comprise the United States’ original fusion cuisine.

Enchantment: A New Mexican Cookbook today stands as the largest and most ambitious collection of traditional New Mexican recipes ever created.  It will be an indispensable resource for any home cook or even professional chef who is interested in New Mexican cuisine and a fine addition to your bookshelf.
